Hey guys I want to apologize, usually I have a bigger gap between soup recipes but I accidentally deleted some footage for another recipe.. that I am remaking. Lol anyway on to the awesome soup recipe! So far since I made the switch from burgers to soups I made a beef and a chicken so how about a awesome Vegetable Soup. To be specific a Vegetable Dumpling Soup. This is one of my wife’s favorite soups I make for here and she asks for it all the time. Why? Because it tastes so freaking AWESOME, seriously you will simply fall in love with this one! So go ahead and try this one, when you do make sure to take a picture and post it to my Facebook page!

Vegetable Dumpling Soup Recipe

Total Time: 23 minutes

Yield: 6 Servings

Vegetable Dumpling Soup Recipe

Ingredients

  • 1 Cup Flour
  • 4 Tbsp. Olive Oil, Divided
  • 1/2 Cup Water, Warm
  • 1 Onion, Diced
  • 2 Carrots, Diced
  • 2 Garlic Cloves, Minced
  • 2 Cups Potato, Chopped
  • 1 Cup Flour
  • 1 tsp. Dill
  • 1/2 tsp. Sage
  • 1/2 tsp. Thyme
  • Salt
  • Pepper
  • 6 Cups Vegetable Broth

Instructions

  1. n a small mixing bowl, combine flour, baking powder, and salt with a spatula. Form a well in the middle of the dry mixture and add 2 tablespoons olive oil and warm water. Mix until dough forms in to a sticky ball. Cover with a dish towel and set aside.
  2. In large pot, add the olive oil over medium heat. Once the oil begins to shimmer, add the onion and carrot and cook for about 4-5 minutes, or until the onions are semi-translucent.
  3. Add in the garlic, dill, sage, thyme, and pepper, and cook for 2-3 more minutes until herbs are fragrant.
  4. Stir in potatoes, vegetable broth, and bay leaves, and bring to a boil. 5. Reduce heat to medium-high and simmer about 8 minutes or until potatoes are about 75 percent cooked through.
  5. Carefully drop in dollops of the dumpling dough, about 1 inch in diameter.
  6. Let dumplings simmer for about 10 minutes, or until chewy and cooked through.
