So this is the recipe that I lost the footage too, and literally just got done re-shooting and editing it. Haha! Anyway Happy Friday everyone! It’s Football season again we are a couple weeks in that means it’s time to have people over and watch the games (even though my team can’t win lol). With people coming over you have to feed them right? So here you go some Jalapeno Popper Stuffed Onion Rings! Come on I really don’t have to go too far into this one right? I mean just read that title a couple of times and this recipe will totally sell it self LMAO! So I am going to go ahead and just tell you guys to try this one because you will totally fall in love with it! When you do go ahead and take a picture and post it to my Facebook page.

Jalapeno Popper Stuffed Onion Rings

Total Time: 2 hours, 25 minutes

Yield: 4 Servings

Jalapeno Popper Stuffed Onion Rings

Ingredients

  • 3 Medium Onions
  • 8 oz. Cream Cheese, Softened
  • 1 Cup Cheddar Cheese, Shredded
  • 1/2 lb. Bacon, Cooked & Crumbled
  • 2 Jalapenos, Seeded & Diced
  • 1 Cup Flour
  • 4 Eggs, Beaten
  • 2 Cups Panko Bread Crumbs

Instructions

  1. Cut onions into thick slices, and separate rings.
  2. Mix the cream cheese, cheddar cheese, diced jalapeno, crumbled bacon, salt and pepper in medium bowl.
  3. Place onion rings on metal tray lined with parchment paper. Fill each ring with popper mixture, place in freezer for two hours allowing them to become firm.
  4. Place flour, beaten eggs, and panko bread crumbs in three separate bowls.
  5. Dredge each of the frozen rings through the flour, then egg and then panko bread crumbs.
  6. Fry rings in oil heated to 375 degrees for a couple of minutes until golden brown.
