This is it, the 49th Pancake of the Week, just one more until we move from Pancakes to French Toast! So for the next to last pancake of the week I am making some super AWESOME Sugar Cookie Pancakes. I have a lot of fun doing these dessert for breakfast recipes. Seriously nothing hits that sweet tooth like killing it first thing in the morning like this. So go ahead guys I know you will totally love this one when you try it. When you do make it make sure you take a pic and post it to my Facebook page!

Super Cookie Pancakes Recipe

Ingredients
  

Icing Topping

  • 1-1/4 Cup Powdered Sugar
  • 4 Tbsp. Heavy Cream
  • 1/2 tsp. Vanilla

Pancakes

  • 2-1/4 Cup Flour
  • 1-1/4 Cup Sugar Cookie Creamer
  • 1/2 Cup Ricotta Cheese
  • 2 Eggs
  • 4 Tbsp. Sugar
  • 1 tsp. Baking Powder
  • 1 tsp. Vanilla
  • 1/2 tsp. Baking Soda
  • Salt

Instructions
 

  • In large bowl mix flour, sugar, baking powder, baking soda, salt.
  • In a medium bowl whisk together ricotta, creamer, eggs and vanilla. Pour all the wet ingredients in the dry ingredients and mix together completely.
  • Heat pan/skillet over medium heat. Add batter to skillet 1/4 cup at a time and cook until golden on both sides. About 3-4 minutes.
  • For icing whip together heavy sugar, powdered sugar and vanilla.
  • Spread icing over a pancake stack and serve!
