Black and Blue Mac and Cheese

What’s up guys! This Sunday the 17th is St. Patricks Day, so I decided to do a few Irish inspired recipes this week to lead up to it. Today’s recipe is some Black and Blue Mac and Cheese! This is an EPIC Mac n’ Cheese with a Guinness beer cheese sauce along with blue cheese! OMG this is so freaking good! Fun note when I was cooking this I had Elgin’s own Chef Jeff hanging out with me as we were talking about starting a food podcast. You know culinary trained chef and just an Average Guy who likes to cook.. and well I have to say he loved this one lol. If he loved it I know you guys will too. Black and Blue Mac and Cheese Recipe

Ingredients
  

Mac n’ Cheese:

  • 1 lb. Pasta Shells
  • 2 Cups Milk
  • 2 Cups White Cheddar Cheese Shredded
  • 1/2 Cup Guinness
  • 1/4 Cup Blue Cheese Crumble
  • 3 Tbsp. Butter
  • 3 Tbsp. Flour

Topping:

  • 1/2 Cup Panko Breadcrumbs
  • 1 Tbsp. Butter

Instructions
 

  • Pre-heat oven to 375˚.
  • Cook shells as per boxed instructions, drain and set aside.
  • In sauce pan or oven safe skillet, melt butter and add flour mixing until combined. Allow to cook for about 1 minute.
  • Slowly add in your Guinness and whisk until smooth, whisk in milk and allow to cook for 7-10 minutes allowing sauce to thicken.
  • Remove from heat and stir in cheddar until cheese is completely melted in, do the same with about half of your blue cheese crumble.
  • Add in pasta shells and stir until coated. Place in baking dish (if not using an oven safe skillet).
  • Melt butter for topping in a small pan, add in bread crumbs and stir. Cooking breadcrumbs until they are nicely toasted.
  • Sprinkle toasted breadcrumbs over mac n’ cheese, and place in the oven and cook for about 25 minutes.
  • Sprinkle with a little more blue cheese and serve.
