S’mores Sweet Potatoes

Ok I am running out of time to pump these fun Thanksgiving recipes out lol. The day is almost here. lol. Anyway here is a fun little twist on the typical Sweet Potato Casserole. I made some S’mores Sweet Potatoes! Yup we took Sweet Potatoes and totally went next level on these lol. This is a total OMG wow! type of dish when people try it. I mean with your typically sweet potato casserole you are half way to this one lol so might as well take those few extra steps and totally kill it on Thanksgiving lol. S’mores Sweet Potatoes

Total Time: 1 hour

Yield: 8 Servings

S’mores Sweet Potatoes

Ingredients

  • 3 lb. Sweet Potatoes, Peeled and Sliced
  • 4 Cups Mini Marshmallows
  • 1-1/2 Cup Graham Cracker, Crushed
  • 1 Cup Half & Half
  • 4 Tbsp. Butter
  • 1 Tbsp. Cocoa Powder
  • 1 Tbsp. Sugar
  • 1/3 tsp. Cinnamon
  • Salt

Instructions

  1. Preheat the oven to 400 degrees F. Lightly grease a 10-inch cast-iron skillet.
  2. Toss the sweet potatoes with the melted butter, cocoa powder, sugar, cinnamon, chipotle powder and salt in a large bowl until well coated. Make a single concentric layer of overlapping sweet potato slices in the bottom of the skillet, then generously sprinkle with 1/2 cup graham cracker crumbs.
  3. Evenly pour the half-and-half over the sweet potatoes, then cover the pan with aluminum foil; bake for 30 minutes. Remove the foil and cover the sweet potatoes with the miniature marshmallows. Turn the oven to broil and place the pan at least 6 inches away from the flame. Toast until the marshmallows are brown, 3 to 5 minutes. Cool for 10 minutes before serving.
