Salt and Vinegar Potato Wedges

After a long weekend of running around I wanted to make something quick and simple but that lived up to being a great dish. So I went ahead and made some Salt and Vinegar Potato Wedges. We LOVE Salt and Vinegar chips in this house so when we first ran across this recipe we were in HEAVEN! After tweaking the amounts to be more to our liking it is the perfect simple snack. I mean if you like the chips you will be completely in love with the potato wedges. Go ahead guys give this one a try and when you do make sure to post a picture to my Facebook page!

Salt and Vinegar Potato Wedges Recipe

Total Time 50 minutes
Course Appetizer, Side Dish

Servings 6 Servings

Ingredients
  

  • 2 lb. Russet Potatoes
  • 1-1/4 Cup Vinegar
  • 2 + Tbsp. Salt

Instructions
 

  • In large pot with about 3 quarts of water add 1 Cup vinegar, and 2 Tbsp. of salt. Heat over a medium heat.
  • Cup potatoes into wedges, I cut mine into quarters. Add to pot and bring to a boil, lower heat and simmer for 20 minutes.
  • Remove potatoes from the water and place on paper towels allowing them to come to room temperature.
  • In a fryer or cast iron skillet fill with oil and bring up to a temp of 350˚ Fry wedges for about 5 minutes. Until they are a nice golden brown.
  • Remove from oil and drizzle with remaining vinegar and some salt.
