Instructions
In large pot with about 3 quarts of water add 1 Cup vinegar, and 2 Tbsp. of salt. Heat over a medium heat.
Cup potatoes into wedges, I cut mine into quarters. Add to pot and bring to a boil, lower heat and simmer for 20 minutes.
Remove potatoes from the water and place on paper towels allowing them to come to room temperature.
In a fryer or cast iron skillet fill with oil and bring up to a temp of 350˚ Fry wedges for about 5 minutes. Until they are a nice golden brown.
Remove from oil and drizzle with remaining vinegar and some salt.
