Sweet Potato French Toast

Back again with another greta French Toast recipe. Today we are making a Sweet Potato French Toast! This is a cool little spin on french toast that is super simple to make yet is so freaking good lol. I have done a lot of things with sweet potatoes and I have to say this one really was a lot of fun and came out great. So go ahead guys give this one a try it is fun safe change of pace with your French Toast I know you will love. When you do make it make sure to drop a pic on my Facebook page too!

Sweet Potato French Toast Recipe

Ingredients
  

  • 6 Bread Slices
  • 1 Cup Milk
  • 1 Cup Sweet Potatoes Mashed
  • 2 Eggs
  • 2 Bacon Slices Cooked and Chopped
  • 2 Tbsp. Butter
  • 1 Tbsp. Maple Syrup
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla

Instructions
 

  • Whisk together Milk, eggs, cinnamon, vanilla in a large bowl. Once completely combined add 1/2 of the sweet potatoes and whisk till combined.
  • Heat medium pan/skillet and melt better in it.
  • Dunk both sides of each piece of bread into the milk mixture making sure it is nicely coated.
  • Add in coated brown allowing to cook until completely golden. About 3-4 minutes on each side.
  • Mix remaining sweet potatoes and maple syrup.
  • Stack french toast, spreading sweet potato syrup mixture between each layer. Top with chopped bacon and more maple syrup.
