Hey guys hopefully you all had an amazing weekend. Here my son finished his first full week of practice in about 1 year (Facebook memories showed me it was a year ago this weekend he qualified for State in Wrestling WOW!!) Anyway I am starting to get ready for St. Patrick’s Day by making some of my usual.. you know Different twists on the normal recipe lol. This time I am taking one of my Dad’s favorite sandwiches and make it a pizza… a Reuben Pizza!!! Yup We are taking the great tastes corned beef, sauerkraut, Swiss… well you know the rest lol. This is a really awesome twist you guys will totally fall in love with so go ahead crack open a beer and make this one. How to Make Reuben Pizza!

Total Time 30 minutes
Course Dinner, Gameday, Lunch, Main Course
Cuisine American, Irish, St. Patrick’s Day

Ingredients
  

Thousand Island Dressing:

  • 1 Cup Mayonnaise
  • 1/2 Cup Ketchup
  • 2 Tbsp. Sweet Pickle Relish
  • 2 tsp. Sugar
  • 1/2 tsp. Garlic Powder
  • 2 tsp Dried Minced Onion
  • Salt
  • Pepper

Pizza:

  • 1 Refrigerated Pizza Dough
  • 2 Cups Swiss Cheese Shredded
  • 6 oz. Deli Corned Beef Chopped
  • 1 Cup Sauerkraut Rinsed and Drained
  • 1/2 Cup Cornmeal

Instructions
 

  • Preheat your oven to 400˚F.
  • Spread cornmeal evenly on your baking sheet or pizza stone. Roll out your pizza dough onto the prepared baking sheet. Brush with a little bit of olive oil over the dough and place it in the oven for about 5 to 8 minutes, until the dough starts to become a little golden.
  • While the dough is baking mix together all the ingredients for the thousand island dressing in a small bowl.
  • Remove crust from oven, spread about 1/2 Cup of dressing over the pizza, leaving a small (about 1 inch) gap between the dressing and edge.
  • Next add all of your cheese, chopped corned beef, and top with sauerkraut. Place back in the oven and let cook another 10 to 12 minutes, until crust is well colored and cheese is melted.
