Meatball Stuffed BBQ Onions

Happy hump day everyone! I am making something I am going to end up taking outside and serving next to my afternoon BBQ food. In our house we like meatloafs, meatballs, things like that so I decided to do a cool BBQ version of those, I am making some Meatball Stuffed BBQ Onions! These are a really cook little recipe that will totally kill it. I am laying a really basic version here that is easy to tweak. Think of your favorite way to make meatloaf or a meatball and you can do it with these too. So go ahead guys give this recipe (or your tweak on this recipe lol) a try I know it will quickly becomes a favorite of your house hold! Meatball Stuffed BBQ Onions Recipe

Total Time: 1 hour

Yield: 6 Servings

Meatball Stuffed BBQ Onions Recipe

Ingredients

  • 1 lb. Ground Beef
  • 2 Onions, (You will end up dicing 1/4 Cup of them)
  • 1/4 Cup Parsley
  • 1/4 Cup Panko
  • 1 Tbsp. Brown Sugar
  • 1 Tbsp. Ketchup
  • 1 Tbsp. Hot Sauce
  • 1 tsp. Soy Sauce
  • 1 tsp. Worcestershire Sauce
  • Bacon
  • BBQ Sauce

Instructions

  1. Preheat your oven to 425 °F.
  2. Cut off the tops and bottoms of the onions and remove the exterior skin. Cut the onion in half and peel the layers apart, keeping the biggest layers and set aside.
  3. In large bowl mix the ground beef, diced onion, parsley, brown sugar, condiments, and bread crumb thoroughly.
  4. Place a handful of the meatball mixture inside two of the onion layer pieces.
  5. Wrap the onion meatballs in bacon. Secure the bacon with toothpicks to keep it from unraveling during cooking.
  6. Bake in a dish at 425 °F for 40 minutes. Cover the balls in BBQ sauce and bake for an additional 5 minutes.
