So YEARS ago we went to Disney World on a family vacation. When we had hit Epcot, we had lunch at the Ackerhaus Royal Banquet Hall. You know did the whole princess lunch for my Daughter (who was 3 at the time) so she could meet all the princesses. She had her Cinderella dress on and all. Well when we sat down everyone order like normal food. When it came to me I looked at the menu and said I can’t pronounce this but I want to try something different. OMG that changed my life I ended up getting the Disney World Kjottkakker! Once I started cooking this is one of the first recipes I went out and HAD to learn how to cook. I hit so many wrong ones, I ended up combining about 3-4 recipes and hit on it. Now I can’t say this is traditional Norwegian Kjottkakker, but this is pretty dead on to what is served at Disney World. You guys NEED to try this one really. You will totally love it. Disney World Kjottkakker Recipe

Ingredients
  

Meatballs:

  • 2 lb. Ground Beef
  • 1 lb. Ground Pork
  • 2 Eggs
  • 1 Cup Bread Crumbs
  • 1/2 tsp. Ginger
  • 1/2 tsp. Nutmeg
  • 1/4 tsp. Allspice
  • Salt
  • Pepper
  • Lingonberry or Red Currant

Gravy:

  • 1 Onion Chopped
  • 4 Cups Beef Broth
  • 1 Cup Milk
  • 1/2 Cup Sour Cream
  • 1/4 Cup Flour
  • 3 Tbsp. Butter
  • Salt
  • Pepper

Instructions
 

  • Preheat oven to 375˚.
  • In a large bowl mix all the meatball ingredients together excluding the lingonberry/currant.
  • Form into meatballs and place on a jelly roll pan. Bake for about 20-25 minutes.
  • Once meatballs are done, pull out set aside and start gravy.
  • In a pan skillet, melt butter and saute onions.
  • Once onions are tender add in beef broth and milk whisking together until completely combined.
  • Whisk in flour and seasoning, continue to whisk until there are no lumps.
  • Place meatballs into gravy, allow to simmer for about 20 minutes.
  • Remove meatballs from gravy, add in sour cream and whisk until completely combined.
  • Serve by pouring some gravy over meatballs and a heaping Tbsp. of Lingonberry!
