It seems to be a reoccurring theme with me, you know dessert for breakfast lol. That’s exactly what I have for you today, a way to take care of that sweet tooth and have an awesome breakfast at the same time. So those really cool Churros you get, and you know want to just always have? Well here you go have them for breakfast, kind of lol. Churro Pancakes are a fun little breakfast that has that sweet cinnamon flavoring you all love. Add on top of that this great spicy chocolate sauce and boom this one goes completely over the top. Churro Pancakes Recipe

Total Time: 30 minutes

Yield: 6 Servings

Churro Pancakes Recipe

Ingredients

  • Pancakes:
  • 1-1/2 Cup Flour
  • 1-1/2 Cup Milk
  • 1/8 Cup Sugar
  • 2 Tbsp. Butter, Melted
  • 1-1/2 tsp. Cinnamon
  • 1-1/2 tsp. Baking Powder
  • 1/2 tsp. Baking Soda
  • 1 Egg
  • 1 Egg White
  • Salt
  • Chocolate Sauce:
  • 6 oz. Chocolate Chips
  • 1/2 Cup Heavy Cream
  • 2 Tbsp. Butter
  • 1 tsp. Cinnamon
  • 1/2 tsp. Cayenne Pepper
  • Topping:
  • 1/2 Cup Sugar
  • 2 tsp. Cinnamon

Instructions

  1. In a large bowl combine the flour, sugar, cinnamon, baking soda, baking powder and salt - whisk to combine.
  2. In a medium bowl beat together the egg and egg white, milk and melted butter.
  3. Stir the wet ingredients into the dry until mixed well.
  4. Mix in a small plate the sugar and cinnamon for topping and set aside.
  5. In a small saucepan over low heat melt the chocolate chips then whisk in the heavy cream, butter, cinnamon and the cayenne pepper... stir constantly until it is well combined - turn off heat and set aside.
  6. Heat a griddle over medium heat, place about 1/4 cup batter on top and cook until golden on each side, about 3-4 minutes.
  7. Use a bit of soft butter on each side of the pancake then dip pancakes in the cinnamon sugar mixture that is on the plate.
  8. Top with the chocolate sauce.
