The end of the week is here! Well I decided I hadn’t done a soup in a long time, but I didn’t want to do a plain old boring basic soup. I wanted something hearty and over the top lol. Well I give you Chicken Parmesan Soup! Yup a super cheesy awesome tasting killer over the top comfort food soup for these cold winter days. Wow that really is a mouth full to describe it huh? That’s ok because trust me you will be shoveling this food in so fast it will be the mouth food hahaha. Anyway guys seriously you have to try this one and I know you will. Chicken Parmesan Soup Recipe

Total Time: 30 minutes

Yield: 6 Servings

Chicken Parmesan Soup Recipe

Ingredients

  • 1 lb. Chicken Breast, Cooked and Chunked
  • 6 Cups Chicken Broth
  • 15 oz. Diced Tomatoes
  • 1-1/2 Cup Parmesan Cheese, Shredded
  • 8 oz. Penne, Cooked
  • 3 Garlic Cloves, Minced
  • 3 Tbsp. Tomato Paste
  • 1 tsp. Italian Seasoning
  • 1 tsp. Basil
  • 1 tsp. Red Pepper Flake
  • Salt
  • Pepper

Instructions

  1. Warm oil in a large pot over medium heat. Add garlic and cook until fragrant.
  2. Stir in tomato paste, crushed red pepper flakes, Italian seasoning, and basil. Add diced tomatoes and chicken broth, bring to a simmer. Add chicken and cook until cooked through, 10 to 12 minutes.
  3. Add dry pasta and cook for about 10 minutes, until pasta is cooked through.
  4. Mix in both cheeses until just melted. Season with salt and pepper.
