Let’s have some fun with pancakes this week and do something a little bit over the top. So what does that mean?What are we making? No fair lol you already read the title so you know.. Cannoli Pancakes! Yup we are doing a dessert for breakfast kind of thing here today. Come on guys you know you love when he do one of these breakfast/dessert days lol. Cannolis are a great little dessert that if you haven’t tried you really need to try and this is an amazing variation on that great Italian treat. So go ahead guys give this one a try and when you do make sure to take a picture and post it to my Facebook page!

Ingredients
- 2 Cup Pancake Mix
- 2 Cup Heavy Cream
- 1/3 Cup Powdered Sugar
- 1 tsp. Cinnamon
- 1 Cup Ricotta Cheese
- 2 Cups Mini Chocolate Chips
- 1 Tbsp. Butter
Instructions
- In a large bowl using a handheld mixer, beat together heavy cream, powdered sugar, cinnamon and nutmeg until stiff peaks form. Fold in ricotta and 1 cup chocolate chips. Set aside.
- Make pancakes according to box instructions, with the addition of the remaining cup chocolate chips.
- In a large skillet over medium heat, heat butter. Make large pancakes, then stuff with ricotta mixture and fold like a cannoli.
- Garnish with powdered sugar, whipped cream and more mini chocolate chips. Serve.
