What’s up, everyone? Here we are at the end of the week hopefully everyone had an awesome week, and have an even better weekend. I decided to have a little bit of fun, I went back to my roots of grilled cheese sandwiches and made a next-level one. Bruschetta Grilled Cheese is seriously fun, easy, and tastes really freaking great! Awesome Bruschetta Grilled Cheese!!

Ingredients
  

  • 1 Loaf Italian Bread Sliced
  • 1 Ball Fresh Mozzarella Thinly Sliced
  • 1/2 Cup Parmesan Grated
  • 10 oz. Tomatoes Diced
  • 1/2 Red Onion Diced
  • 1/2 Bunch Fresh Basil Diced
  • 1 Garlic Cloves Peeled
  • 1 Cup Balsamic Vinegar
  • 1 Tbsp. Brown Sugar
  • Olive Oil
  • Salt
  • Pepper

Instructions
 

  • In a small sauce pan mix together the balsamic vinegar, and the brown sugar bring to a simmer and allow to cook for about 15 to 20 minutes so it can reduce down.
  • In a large bowl mix together tomatoes, onion, basil, salt and pepper with 1 Tbsp. of olive oil. Set aside until ready to use.
  • brush one side of each side of the bread slices with olive oil, then rub the oil with garlic.
  • Heat a pan over a medium heat. Place a slice of bread, oil side down top with sliced mozzarella, bruschetta mix, parmesan, and top it with the second slice of bread oil side up.
  • Cook a few minutes on each side so the bread is a crispy golden brown. Place on a plate and drizzle with the balsamic glaze.
