I have all the hardware for the live stream now. I did a little test and it ran. Now it is just setting everything up, and getting my graphics made and all that fun stuff. Anyway! Today is Friday, finally Friday =) man did I need this lol. Today I am throwing a simple and cool dinner out that is an easy win. Like a lot of my recipes, these Spinach and Artichoke Stuffed Shells one is easy to tweak to add what you like to it. I made this one without any meat, but heck wanna add some Italian sausage boom done and it still works. How to Spinach and Artichoke Stuffed Shells

Ingredients
  

  • 16 Jumbo Shells
  • 28 oz. Tomato & Basil Marinara Sauce
  • 2-1/2 Cups Mozzarella Cheese Shredded & Divided
  • 1-1/2 Ricotta Cheese
  • 1 Cup Frozen Spinach
  • 1 Cup Artichoke Hearts Drained and Chopped
  • 1/2 Cup Parmesan Cheese
  • 1 Egg
  • 2 Garlic Cloves Minced
  • 1/2 tsp. Red Pepper Cili Flakes
  • Salt
  • Pepper

Instructions
 

  • Pre-heat the oven to 400˚F. Bring a pot of salted water to a boil and cook about half way. Drain and set aside.
  • In a medium bowl mix together ricotta cheese, spinach, artichoke hearts, 1-1/2 cups mozzarella cheese, parmesan cheese, egg, garlic, salt, pepper and chili flakes.
  • Pour about half of the marinara into the bottom of a 9×13 baking dish.
  • Spoon cheese mixture into each shell equally and lay into the baking dish. Top with remaining marinara sauce and mozzarella cheese, and bake for 20 minutes.
  • Remove from oven and serve.
