Simple Spicy Shrimp Sushi Stack

What’s up everyone?! It’s Friday we made it through another week! Woot Woot! II have to throw this out there, if you missed the live stream on Twitch last night you missed a good one. I made a super simple Skillet Lasagna! Anyway enough about last night.. TONIGHT, Friday night we are doing sushi.. but this is like really sushi for beginners. I am making a Simple Spicy Shrimp Sushi Stack. Now I did Shrimp BUT you don’t have top it with shrimp this is a VERY versatile recipe and you can use literally ANY Sushi grade topping. Guys this is a really cool and easy way to up your game a little, you know for that special little date night or just something different for lunch or dinner. So go ahead guys give this one a try and start down that road of super simple sushi lol. OH!! And when you make it, make sure to post a pic to my Facebook page!

Simple Spicy Shrimp Sushi Stack

Total Time: 25 minutes

Yield: 4 Servings

Simple Spicy Shrimp Sushi Stack

Ingredients

  • Rice:
  • 1 Cup Rice, Uncooked
  • 2 Tbsp. Rice Vinegar
  • 1 Tbsp. Sugar
  • Salt
  • Avocado Mix:
  • 1 Cup Avocado, Mashed
  • 1 Cup Cucumber, Peeled and Diced
  • 1 Tbsp. Lime Juice
  • Salt
  • Pepper
  • Spicy Shrimp:
  • 1 lb. Shrimp, Cooked and Diced
  • 3 Tbsp. Mayonnaise
  • 1 Tbsp. Stiracha

Instructions

  1. Bring the rice and water to a boil, reduce the heat and simmer, covered, until the rice is tender and the water has been absorbed, about 20 minutes, before letting it cool for a bit.
  2. Gently fold the mixture of the rice vinegar, sugar and salt into the rice
  3. In medium bowl thoroughly mix all the ingredients for the Avocado Mix.
  4. In a second bowl mix all ingredients for the shrimp mixture.
  5. Place the rice into the stack guides, pat down lightly, top with the avocado and cucumber mixture, followed by the shrimp mixure
