Pumpkin Roll Cake

It is Pumpkin flavor season, with that I am doing another great pumpkin dessert. So why not have some fun and do something really cool while making that seasonal dessert. So why not go ahead and do a Pumpkin Roll Cake Recipe. This is a cool little dessert that would be really cool to put out for the big family get together. Just imagine this bad boy set out on Thanks Giving when the WHOLE family is over and you wow them with this simple yet really cool and great tasting dessert. This cake is a 100% winner that anyone you make it for will love so go ahead and give this one a try and leave me a comment on how much you love it!

Cake
  1. 4 Tbsp. Powdered Sugar
  2. 3/4 Cup Flour
  3. 1/2 tsp. Baking Powder
  4. 1/2 tsp. Baking Soda
  5. 1/2 tsp. Cinnamon
  6. 1/2 tsp. Ground Cloves
  7. Salt
  8. 3 Eggs
  9. 1 Cup Sugar
  10. 2/3 Cup Canned Pumpkin
Filling
  1. 8 oz. Cream Cheese, Softened
  2. 1 Cup Powdered Sugar
  3. 6 tbsp. Butter
  4. 1 tsp. Vanilla
Cake
  1. Preheat oven to 375° F. Grease a 13x18-inch half sheet pan; line with parchment paper. Grease and flour paper. Sprinkle a thin, cotton kitchen towel with the 3-4 tablespoons of powdered sugar.
  2. Combine flour, baking powder, baking soda, spices and salt in small bowl. Beat eggs and sugar in larger mixer bowl until thick and pale yellow in color. Beat in pumpkin. Stir in flour mixture. Spread evenly into prepared pan.
  3. Bake for 13-15 minutes or until top of cake springs back when touched. Immediately loosen and turn cake onto prepared towel. Carefully peel off paper. Roll up cake and towel together, starting with narrow end. Cool on wire rack.
Filling
  1. Beat cream cheese, powdered sugar, butter and vanilla in small mixer bowl until smooth. Carefully unroll cake; remove towel. Spread cream cheese mixture over cake. Reroll cake. Wrap in plastic wrap and refrigerate at least one hour. Sprinkle with powdered sugar before serving, if desired.
