Hey guys it’s time to start prepping for St. Patrick’s Day! So that means some really cool recipes. This Guinness Beef Stew is a super cool recipe that is more than just a St. Patty’s Day meal. This is the perfect dinner for any time. A nice fun twist on a typical beef stew. Something to take dinner to that next level that will make everyone say wow! Guinness Beef Stew Recipe

Ingredients
  

  • 2-1/2 lb. Beef Chunks
  • 4 Garlic Cloves Minced
  • 1 Onion Diced
  • 1/2 lb. Bacon Chopped
  • 3-1/2 Tbsp. Flour
  • 1 Bottle Guinness Beer
  • 1/4 Cup Coffee Brewed
  • 4 Tbsp. Tomato Paste
  • 3 Cups Chicken Stock
  • 4 Carrots Peeled and Chopped
  • 2 tsp. Bay Leaves
  • 1 tsp. Thyme
  • 6 to 8 Yukon Potatoes Quartered

Instructions
 

  • Heat a couple of Tbsp. of oil ad a large pot. Salt and pepper your beef and beef to the heated oil. Cook until browned on all sides. you do not have to cook it all the way through, remove and set aside.
  • Add onions and garlic to pat, seasoning with salt and pepper. Cook until onions start to soften. Add in the chopped bacon and cook until browned.
  • Add in the flour and whisk together, after it is smooth allow to cook for another minute. Add in Guinness stirring until completely combined. Add tomato paste, chicken stock, carrots, seasoning, and coffee. Add beef back into the pot and stir together. If needed add water so beef is covered.
  • Bring to a slight boil, reduce heat to low and allow to simmer covered for about 2 hours. Add in the potatoes and allow to cook for another 30-40 minutes. Add slat and pepper to taste and serve.
