First I would like to say I am sorry this one is a day late, my son had back to back wrestling meets on Friday and Saturday as well as my office Christmas party. Heck as I am typing this up he is down stairs with all his friends having a giant study group for finals lol. Anyway on to the task at hand! Pancake of the Week! This week I am doing something a big Christmasy, I am throwing down with some Gingerbread Pancakes! You know this is a fun little pancake that adds that festive spirit to your breakfast table and you guys will totally love this one! Gingerbread Pancakes Recipe

Ingredients
  1. 2 Cups Flour
  2. 1-1/4 Cup Water
  3. 1/2 Cup Molasses
  4. 2 Tbsp. Butter, Melted
  5. 2-1/2 tsp. Ginger
  6. 1-1/2 tsp. Cinnamon
  7. 1-1/2 tsp. Baking Powder
  8. 1/2 tsp. Baking Soda
  9. 1/4 tsp. Nutmeg
  10. 1/4 tsp. Ground Cloves
  11. 2 Eggs
  12. salt
Instructions
  1. In medium bowl whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg and cloves.
  2. In separate mixing bowl whisk together water, molasses, and eggs and melted butter. Pour wet mixture into dry and mix until combined.
  3. Heat pot or griddle over medium flame. Using about 1/4 cup of batter at a time pour into heated griddle until completely cooked. About 3-4 minutes per side.
