Garlic Chicken and Spinach Egg Rolls

It has been a LONG time since I did an awesome freaking egg roll recipe sooooooo. Let’s make some egg rolls lol. That said I am making some Garlic Chicken and Spinach Egg Rolls. I know I like to play and throw some crazy stuff into an egg roll, this time it isn’t a crazy one but OMG this is an awesome flavor combination that totally kills it. The roasted red pepper salsa that goes with it as a dipping sauce just puts this whole thing over the top! You guys will totally LOVE this one. Garlic Chicken and Spinach Egg Rolls Recipe

Total Time: 30 minutes

Serving Size: 10 Egg Rolls

Garlic Chicken and Spinach Egg Rolls Recipe

Ingredients

  • Egg Rolls:
  • 1 lb. Chicken Breast
  • 2 Garlic Cloves, Minced
  • 2 Cups Baby Spinach, Chopped
  • 1 Tbsp. Parsley
  • 1 Tbsp. Cilantro, Chopped
  • 1/4 Cup Parmesan Cheese
  • 1/8 tsp. Red Pepper Flake
  • 10 Egg Roll Wrappers
  • Salt
  • Pepper
  • Red Pepper Salsa:
  • 14.5 oz. Diced & Fire Roasted Tomatoes
  • 1/4 Cup Roasted Red Peppers
  • 1 Garlic Clove
  • 1 Tbsp. Parsley
  • 1 Tbsp. Cilantro
  • Salt

Instructions

  1. Heat about a Tbsp. of oil in a skillet/pan. While oil heats up mince your chicken into small pieces. Add garlic and chicken to pan and cook until Chicken is finished and set aside to cool.
  2. In large bowl mix cooled chicken, chopped spinach, parsley, cilantro, parmesan and red pepper flake. Add salt and pepper to taste.
  3. Heat oil to 375 degrees.
  4. Scoop about 2 Tbsp. of chicken mixture into egg roll wrapper. Fold the corner of roll away from you, fold in both sides. On the exposed portion spread a little water and finish rolling egg roll.
  5. Fry all the egg rolls for a couple minutes until golden brown.
  6. For the red pepper salsa add all ingredients into food processor and pulse until smooth.
