Happy Hump day! That means it’s time for another awesome little recipe, and this time I am throwing down with some amazing Carne Asada Sliders! Yup I love a good slider and this little bad boy is just that a freaking good slider. You add in that Honey Jalapeno marinade for the steak is GREAT! It wouldn’t be complete with out a simple yet great tasting guacamole. Heck if you just walk away with the Guacamole recipe you are still ahead of the game lol. So go ahead guys give these little bad boys a try i know you will totally love them. Oh and when you do make these, make sure you take a pic and post it to my Facebook page!

Carne Asada Sliders

Total Time: 1 hour, 25 minutes

Yield: 6 Servings

Carne Asada Sliders

Ingredients

  • Sliders:
  • 2 Jalapenos
  • 4 Garlic Cloves
  • 1/4 Cup Olive Oil
  • 1/4 Cup Honey
  • 1 Tbsp. Lime Juice
  • 1 tsp. Cumin
  • 1 lb. Skirt Steak
  • 12 Jalapeno Slider Rolls
  • 4-6 Slices Fiesta Jack Cheese
  • Salt
  • Pepper
  • Guacamole:
  • 2 Avocados
  • 1 Jalapeno, Seeded & Diced
  • 1/2 Red Onion, Diced
  • 1/4 Cup Cilantro, Chopped
  • 2 Tbsp. Lime Juice
  • Salt to taste

Instructions

  1. Broil the jalapenosonce the skin on the jalapeños is black and bubbling, remove from the heat and place in a bowl, cover and set aside for 5-10 minutes. Remove from the bowl and peel the skin from the jalapeños.
  2. Stem and seed the jalapeños, then place in a blender or food processor with the garlic cloves, olive oil, honey, lime juice, cumin, salt and pepper. Blend until smooth.
  3. Place the steak in a casserole dish and pour the marinade over the steak. Cover and place in the refrigerator to marinate for 1 hour.
  4. Remove from the refrigerator and grill the steak over medium heat for 7-10 minutes per side. Remove from the grill and let rest for 5 minutes. Slice the steak against the grain.
  5. Distribute the steak among the bottom half of slider rolls.spread cheese over the steak.
  6. Place the sliders back on the grill to melt the cheese over the steak. Place the top of the rolls on the grill to toast.
  7. While cheese is melting take all the ingredients for the guacamole and mix it together, mash until you have it mostly too smooth. Some clumps are ok.
  8. Remove from the grill and top with the guacamole.
  9. Close up with top of rolls and serve!
