Fried Chicken Mac N Cheese Burrito

I experiment with recipes a lot, just playing around just kind of having an idea of what I want to end up with but not knowing exactly how it will come out. Usually I will do all this long before I film a recipe. This time though I decided I wanted to make this and make it now so I decided to film the first time I was cooking something, and honestly wasn’t sure how it was going to come out. Well this Fried Chicken Mac N Cheese Burrito totally KiLLED it!! lol I was literally driving home from work and this just hit me, and I needed to eat it like NOW!! So I got all the stuff on my way home and just said ok lets do this! I know next time around I will take it up a notch, maybe some buffalo chicken or like a firecracker chicken. I will also make like a loaded smokey bacon mac n’ cheese next time around also lol. Whether you make a basic version like I made in the video or you ramp it way up like I am planning on doing you HAVE to try this. I mean really guys this is a whole new level of OMG!! See cooking can be fun =)

Mac N' Cheese
  1. 1 lb. Elbow Pasta
  2. 2 Tbsp. Butter
  3. 2 Tbsp. Flour
  4. 2 Cups Milk
  5. 2 Cups Cheddar Cheese, Shredded
  6. Salt Pepper
Fried Chicken
  1. 1-1/2 lb. Chicken Tenders
  2. 3 Eggs
  3. 1/4 Cup Milk
  4. 1 Tbsp. hot Sauce
  5. Salt
  6. Pepper
  7. 4 Burrito Size Tortillas
Mac N Cheese
  1. Boil pasta according to package directions. Drain pasta and set aside.
  2. In the pot that you cooked pasta in heat the butter until melted, add the flour and whisk.
  3. Whisk in the milk slowly. This will create a thick sauce, adding about ¼ cup at a time.
  4. Add in cheese and whisk smooth. Pour pasta into the sauce and stir with a spatula until the sauce covers the pasta completely.
  5. Add salt and pepper to taste.
Chicken
  1. Preheat the oil in your deep fryer or a cast iron skillet to 350 degrees.
  2. In a medium bowl, whisk the milk, eggs, and hot sauce until combined. In another medium bowl, whisk together the flour and 2 tsp salt.
  3. Pat chicken dry. Dredge each wing in the milk/egg mixture, then in the flour, then back in the egg mixture and again in the flour. Make sure to shake the excess off after each step.
  4. Fry the tenders in batches. Fry them until crispy and golden brown, about 10 minutes. Remove from fryer and place on a baking rack.
Assembly
  1. Place two tenders in the middle of a burrito tortilla, spoon in a large amount of mac n' cheese.
  2. Fold up closest side of tortilla, then fold in both sides and tightly roll.
