Hey guys happy Monday, a whole new week, and I started a brand new job today! Well, just orientation so no big news yet lol. So why not a really easy but awesome main course? Today I am doing a twist on a classic meatloaf, making a Chorizo Meatloaf! Yup, we are taking the classic Americana dinner and throwing in a cool twist that will have your whole family raving. How to Make Chorizo Meatloaf

Prep Time 15 minutes
Cook Time 1 hour 15 minutes
Total Time 1 hour 30 minutes

Ingredients
  

Meatloaf:

  • 1 lb. Ground Beed
  • 1 lb. Ground Chorizo
  • 1/2 Onion Diced
  • 3 Garlic Cloves Minced
  • 1 tsp. Cumin
  • 1 Egg
  • 2/3 Panko Breadcrumbs
  • 1/2 Can Ro*Tel Drained

Chipotle Queso Sauce:

  • 1 tbsp. Olive Oil
  • 2 tbsp. Shallots Minced
  • 1 Garlic Clove Minced
  • 1 Tbsp. Flour
  • 1/4 tsp. Cumin
  • 1/4 tsp. Chipotle Powder
  • 1 Cup Extra Sharp Cheddar Shredded
  • 1 Cup Medium Cheddar Shredded
  • 1/2 Can Ro*Tel Drained
  • Salt

Instructions
 

  • Preheat the oven to 350˚F.
  • In a large bowl combine all of the meatloaf ingredients. Place in a prepared loaf pan, or form into a loaf and place on a baking sheet. Place in the oven and bake for 60 to 75 minutes.
  • With 20 minutes left on the meatloaf start the queso. Heat olive oil in a pan over medium heat, add in the shallots, and garlic. Cook until the garlic is fragrant. Whisk in the flour and allow to cook for a minute. Whisk in the milk and seasoning. Once completely combined add in the cheese and stir until completely melted. Last stir in the Ro*Tel and keep warm until meatloaf is done.
  • When meatloaf is done place on a serving plate and top with chipotle queso.
