Anthony has been tearing it up and being his senior year I have been slacking here to pay attention to that lol. I needed to make a really… REALLY fast recipe with how busy sports has kept me. These Chipotle Cheddar Avocado Rollups are the perfect little snack or appetizer when you have next to no time to prep. Super Simple Chipotle Cheddar Avocado Rollups

Total Time 5 minutes

Ingredients
  

  • 2 Tortillas Burrito Size
  • 1 Large Avocado I couldn’t find a large so got 2 smalls
  • 1/4 Cup Plain Greek Yogurt
  • 1 tsp. Lemon Juice
  • Salt
  • Pepper
  • 8 Cheddar Cheese Slices
  • 2 tsp. Chipotle Seasoning
  • 1/2 Cup Sun-Dried Tomatoes

Instructions
 

  • In a small bowl combine avocado, yogurt, lemon juice, salt and pepper. Mash to combine, it should end up nice and smooth.
  • Spread the avocado mix across the tortillas evenly leaving about a 1/2 inch gap at the edge of the tortillas. Top with 4 slices of cheese on each tortilla, next sprinkle each with with half of the chipotle seasoning, and last the sun dried tomato.
  • Tightly roll up the tortillas with the seams down, and slice into roughly 1 inch segments, and serve.
