Chicken Parmesan Meatballs

A dish that always go over huge in my house is Chicken Parmesan. Now you can tell from all the videos I don’t like cooking the same thing over and over all the time lol. So if I am going to make something I want to always look for new twists on that recipe. Well here is one of those twits, Chicken Parmesan Meatballs! This is an awesome idea for a cool little dinner that’s pretty freaking easy to make, and let’s be honest your family is going to LOVE Chicken Parmesan and you know it lol. Chicken Parmesan Meatballs

Total Time: 12 minutes

Yield: 6 Servings

Chicken Parmesan Meatballs

Ingredients

  • 1 lb. Ground Chicken
  • 1-1/2 Cups Mozzarella Cheese, Shredded
  • 1/2 Cup Bread Crumbs
  • 1/4 Cup Parmesan Cheese
  • 2 Tbsp. Parsley
  • 4 Garlic Cloves, Minced
  • 1 Egg
  • 3 Tbsp. Olive Oil
  • 28 oz. Crushed Tomatoes
  • 1 tsp. Red Pepper Flakes
  • Salt
  • Pepper

Instructions

  1. *Preheat oven to 400º. In a large bowl, combine ground chicken, bread crumbs, Parmesan, parsley, half the garlic, and egg and season with salt and pepper. Mix until fully combined, then form into meatballs. 
  2. In a large oven proof skillet, heat 1 tablespoon oil over medium heat. Add meatballs and brown each side, 5 minutes. Transfer to a plate. 
  3. Add remaining 2 tablespoons oil to skillet. Add remaining half garlic and cook until fragrant, 1 minute, then stir in crushed tomatoes and red pepper flakes. 
  4. Bring to a simmer, then return meatballs to skillet. Top with mozzarella and bake until cheese is melted and chicken is no longer pink, 10 minutes more.
