Chicken Jalapeno Bombs

There is nothing I love more during the summer than heading out to the grill to really kill it with something cool in the back yard. Now I do a ton of beef recipes and it feels like I totally have been neglecting Chicken this summer. That said I am trowing down with some Chicken Jalapeno Poppers today! I mean come on cheese filled jalapenos wrapped in chicken wrapped in back and thrown on the grill slathered in BBQ sauce? What’s not to love about this one? It is a pretty simple recipe that will totally up the game of any home cook out there. It will make anyone who tried it totally want more! Chicken Jalapeno Bombs

Total Time: 45 minutes

Yield: 10 Servings

Chicken Jalapeno Bombs

Ingredients

  • 5 Chicken Breasts
  • 5 Jalapenos, Seeded, and Halved
  • 4 oz. Cream Cheese, Softened
  • 1 Cup Cheddar Cheese, Shredded
  • 20 Bacon Slices
  • 1 Cup BBQ Sauce

Instructions

  1. Cut chicken breasts in half lengthwise. Pound the chicken fillets between parchment paper until about ¼ inch thin. Season each with salt and pepper
  2. Stem Jalapenos, and cut in half length wise, remove seeds and clean out center.
  3. In a mixing bowl, mix cream cheese and cheddar cheese until well blended.
  4. Fill each jalapeno half with about 1 Tbs or little more of cheese mixture.
  5. Place filled jalapeno half, cheese side down on chicken fillets and roll chicken around jalapeno.
  6. Wrap 2 pieces of bacon tightly around the rolled chicken, I used tooth picks to hold the bacon in place.
  7. Grill bombs at about 325 degrees over indirect heat for 30 minutes. Turn chicken every 5 minutes, basting with BBQ sauce as you do.
