Hey guys! Happy Saturday everyone, time for another awesome pancake of the week recipe. So my daughter and wife like to go apple picking this time of year, and I use a lot of them in my YouTube recipes. I figured why not go ahead and make some pancakes using them. With that here you go… BOOM! Caramel Apple Pancakes. OMG guys this freaking pancake is so good. It is one of those sweet treat breakfast recipes. The warm caramel in place of syrup is simply amazing and I know it will be a total hit when you try it! Come on, who doesn’t like the taste of some sweet apples! Caramel Apple Pancakes Recipe

Total Time: 40 minutes

Caramel Apple Pancakes Recipe

Ingredients

  • Pancakes:
  • 3-1/2 Cup Flour
  • 1/2 Cup Sugar
  • 4 Eggs
  • 2 Cups Buttermilk
  • 2 tsp. Baking Soda
  • Apples:
  • 2 Granny Smith Apples, Peeled and Diced
  • 1/4 Cup Sugar
  • Caramel:
  • 1 Cup Sugar
  • 1 Tbsp. Corn Syrup
  • 4 Tbsp. Water
  • 1/2 Cup Heavy Cream

Instructions

  1. Combine sugar, corn syrup & water together in a pot. Bring to boil and stir with a wooden spoon until the sugar is dissolved. Bring cream to boil in microwave.
  2. Allow the sugar to cook undisturbed over medium heat until it’s amber in color.
  3. Slowly pour the hot cream into the caramel, and stir with a wooden spoon to combine. Cook for another 1-2 minutes. Take off the heat.
  4. While making the caramel, combine sugar & apples together. Cook until apples are soft.
  5. Whisk eggs and sugar together, add buttermilk and flour, baking soda and mix using a whisk or a mixer until smooth.
  6. Using about 1/4 Cup scoops cook pancakes until golden brown on both sides, about 3-4 minutes each side.
  7. Place apples over pancakes. Drizzle with caramel.
