Happy Monday! I hope everyone had a great weekend, because here we are again another Monday in the books. So let’s start the week with a nice sweet recipe. I am going to make an awesome dessert. We are throwing down with some Apple Cider Cupcakes, to top them off and make them even better I am going to whip up some Brown Sugar Cinnamon Buttercream Frosting. Yup, we are going over the top on this one and going super sweet type dessert. With the onset of fall it’s the perfect time for these awesome cupcakes. I mean who doesn’t like apple cinnamon style desserts lol. I know I do and so will you. So guys go ahead and give this one a try. Apple Cider Cupcakes Recipe

Total Time: 45 minutes

Yield: 12-18 Cupcakes

Apple Cider Cupcakes Recipe

Ingredients

  • Cupcakes:
  • 2 Eggs
  • 1-2/3 Cups Flour
  • 1 Cup Apple Cider
  • 2/3 Cup Sugar
  • 1/2 Cup Butter, Softened
  • 2 tsp. Baking Powder
  • 1 tsp. Cinnamon
  • 1 tsp. Vanilla
  • Salt
  • Buttercream:
  • 3 Cup Powdered Sugar
  • 1 Cup Butter, Softened
  • 1/2 Cup Brown Sugar
  • 1 tsp. Cinnamon
  • 1-3 Tbsp. Milk
  • 1 tsp. Vanilla

Instructions

  1. Cream together butter and sugar in the medium bowl. Add the eggs and vanilla and mix until fully incorporated.
  2. Whisk together all of the dry ingredients in a separate bowl. Add the apple cider and the mixture of dry ingredients, alternating between the two, slowly incorporating them into the butter/sugar/egg mixture.
  3. Fill cupcake liners ? full and bake at 350º for 17-19 minutes. Bake until toothpick inserted into center comes out clean.
  4. Whip butter, brown sugar, cinnamon and vanilla together with a mixer until light and fluffy.
  5. Gradually add powdered sugar and mix until incorporated.
  6. Add milk until you reach desired consistency.
  7. Once cupcakes have cooled frost each cupcake.
