Hey guys it’s time for another cool recipe out of my new cookbook the Easy Puerto Rican Cookbook! If you want to check out the book here. This is a VERY simple little side dish that doesn’t take too much work, does it take that many ingredients. Yuca Frita/Fried Yucca (Cassava) is a cool little flip on the normal french fries you most likely love. Heck I know fries are one of my weaknesses lol. Seriously though guys this is a very inexpensive way to dip your toes into those international cooking waters. Make sure to give this one a try when you do take a picture and post it to my Facebook page!

Yuca Frita Recipe

Total Time 25 minutes
Course Appetizer, Side Dish
Cuisine Fried Food, Puerto Rican
Servings 4 Servings

Ingredients
  

  • 3 pounds yuca
  • Water
  • 3 cups canola oil
  • Salt

Instructions
 

  • Peel your yuca and cut into about 4-inch-long sticks. (I prefer mine closer to a steak fry, but some people like them thinner).
  • Place in a pot with enough water to cover the yuca by one inch. Bring to a boil and simmer for about 20 minutes, or until the yuca is soft yet still firm enough to hold its shape.
  • Drain the water. In a skillet heat the oil over medium heat. Once the oil is hot, place the yuca into the skillet and fry until golden brown, 2 to 3 minutes.
  • Place cooked yuca on paper towels to drain the excess oil and serve with Salsa Rosa
