Lay one tortilla on a flat surface and sprinkle with about half of the cheese. Add turkey, a little more cheese, cranberry sauce, and the remaining cheese. Top with second tortilla.
In a pan melt the butter, place quesadilla into pan and cook for about 3 minutes on each side, until both are a golden color.
Remove from pan and cut into quarters. If you have some left over gravy you can use that as dipping sauce too!
