Preheat oven to 350˚F.
Melt butter in a skillet, add celery, onion salt and pepper to taste. Cook for about 6 to 8 minutes, until vegetables are tender. Add in beer and bring to a simmer. Reduce liquid by half and remove from heat.
In a small bowl whisk together eggs, Worcestershire sauce and chicken brother, and set aside.
In a large bowl toss together French bread, 1/2 of the baco, 1/2 of the cheddar cheese, 1/2 Tbsp. Thyme and the sage. Pour vegetable mixture and broth mixture over bread and toss so bread gets saturated.
Transfer to a prepared baking dish, cover with foil and bake for 40 minutes, remove the foil and bake another 20 minutes. Until it is crisped and a golden brown.
