Heat about 1 Tbsp. of oil in a skillet over a medium heat. Add in chopped potatoes, cooking until they start to become a golden brown. Add in the onion, and chorizo cooking until the chorizo is completely broken up and cooked.
Wipe out the skillet adding another Tbsp. of oil to the pan and start heating it up, add the tortilla in and cook for about 4 to 5 minutes until it starts to crisp up a little. Add in the salsa, chorizo mixture, shredded cheese and then jalapeño.
Place in the oven at 400˚F and bake for about 5 minutes until cheese is melted.
