In a medium bowl mix together oil, garlic powder, oregano, salt and pepper. Toss in cubed steak and make sure it is nicely coated. Set aside for about 30 minutes.
Pre-heat your grill to a medium high heat.
Once steak is done marinating prep your skewers. Place steak, then bell pepper, onion and bread cubes. Then repeat to fill all skewers.
Place on heated grill for 7 to 10 minutes flipping part way through, so you get a nice char and on all sides.
Remove from grill add sliced provolone, cover with foil and allow to rest for a couple minutes until cheese is melted.
