Blackberry Pancake Recipe

Ingredients
  

Pancakes

  • 2 Cups Bisquick Mix
  • 1 Cup Milk
  • 2 Eggs
  • 1 tsp. Vanilla

Blackberry Sauce

  • 2-1/3 Cups Frozen Blackberries Thawed
  • 1/3 Cup Water
  • 1/4 Cup Sugar
  • 2 Tbsp. Maple Syrup
  • 1 Tbsp. Cornstarch
  • 1 tsp. Vanilla

Instructions
 

  • In sauce pan over medium heat mix water and cornstarch until cornstarch is completely dissolved. Add in blackberries, sugar, maple syrup and vanilla. Bring to a boil stirring frequently. Reduce heat and simmer for about 10 minutes. Allow to cool and thicken.
  • In medium bowl mix together all pancake ingredients until completely combined.
  • Heat pan/skillet over medium heat. Add batter 1/4 cup at a time and cook until golden brown about 3-4 minutes on each side.
  • Make your stack of pancakes and top with fresh blackberry sauce.
