In sauce pan over medium heat mix water and cornstarch until cornstarch is completely dissolved. Add in blackberries, sugar, maple syrup and vanilla. Bring to a boil stirring frequently. Reduce heat and simmer for about 10 minutes. Allow to cool and thicken.
In medium bowl mix together all pancake ingredients until completely combined.
Heat pan/skillet over medium heat. Add batter 1/4 cup at a time and cook until golden brown about 3-4 minutes on each side.
Make your stack of pancakes and top with fresh blackberry sauce.
