Whiskey Blue Cheeseburger

So 98% of the things I put up here are so amazingly simple, but a couple have a few more steps to them BUT those extra steps pay off big time! This Whiskey Blue Cheeseburger is that type of recipe. You know that I love an amazing burger with a great combination of flavors and well, that’s what this is. No one part of this burger alone is bad and you put it all together and you get well… awesome lol. From the Whiskey Glaze, to the Guinness Cheese Sauce to those crispy Fried Onions ( which by the way if you have extra CAN and should be eaten as a side dish lol) this burger will NOT let you down or leave you wanting. It’s one of those if you went out to eat and got this you would be paying $20 for a freaking burger man! Lol this burger is where the Gourmet in Average Guy Gourmet comes from lol. Burger
  1. 1.5 lb. Ground Beef
  2. 4 oz. Blue Cheese Crumble
  3. Salt
  4. Pepper
  5. 4 Buns
Crispy Onions
  1. 2 White Onions, Thinly Sliced
  2. 2 Cups Buttermilk
  3. 2 Cups Flour
  4. Salt
  5. Cayenne Pepper to Taste
Whiskey Glaze
  1. 1/4 Cup Whiskey
  2. 1/4 Cup Ketchup
  3. 2 Tbsp. Soy Sauce
  4. 2 Tbsp. Honey
  5. 1 tsp. Dijon Mustard
  6. 1 tsp. Worcestershire Sauce
  7. 1/4 tsp. Cayenne Pepper
  8. Pepper
Guinness Cheese Sauce
  1. 4 Tbsp. Butter
  2. 4 Tbsp. Flour
  3. 1/2 Cup Guinneess
  4. 1/2 Cup Milk
  5. 8 oz. Cheddar Cheese, Shredded
  6. Salt
  7. Pepper
Instructions
  1. Put the sliced onions to a large bowl and pour the buttermilk over top. Use your hand to submerge the onions in the buttermilk. Allow the onions to sit in the buttermilk 10-30 mins.
  2. Add the whiskey, ketchup, soy sauce, honey, mustard, Worcestershire, cayenne and pepper to a small saucepan. Bring to a boil and then reduce the heat to a simmer. Simmer 5 minutes or until the sauce has thickened slightly.
  3. Heat a medium saucepan over medium heat. Add the butter, and once it’s melted and bubbly add the flour. Whisk together to create a roux and cook for 1-2 minutes until mixture gets a bit golden in color. Add the beer and 1/2 cup milk, stir and turn down heat to low. Continue stirring until milk thickens. Add in the cheddar cheese and continue to stir until mixture is smooth. If the sauce seems too thick, thin with more milk. Season with salt and pepper.
  4. Divide the meat into 4 sections. Place a cube of blue cheese in the center of each and then inclose the cheese in the meat forming 4 patties. Place the patties on a plate. Preheat the grill or a grill pan to medium high heat, once hot, season the burgers with salt and pepper and then grill until your desired doneness.
  5. Remove a handful of onions from the buttermilk and place them into the flour mixture. Coat the onions in the flour mixture, and then tap them on the inside of the bowl to shake off the excess. Carefully drop the onions into the hot oil.
  6. Watch the onions closely as they cook quick! After about 1 or 2 minutes, they should be golden brown, remove from the oil and place on a paper towel-lined plate. Repeat with the remaining onion slices.
  7. Place each burger on a toasted bun. Top with a good amount of whiskey glaze and cheese sauce. Add those crispy onions and then the top bun
