Sweet and Sour Meatball Kabobs

When it’s time for me to hit the grill there are so many great recipes to pick from. We literally hit the grill 3 – 4 times a week during the summer. So we have a ton of recipes out on the grill. Yea I know I do burgers a lot, they just happen to be my favorite of all grilled recipes, but one can’t live on grilled burgers a lone lol. So with that said I decided to film one of my other dinner recipes out on the grill. This one is a really easy to make and it comes out so freaking awesome! These Sweet and Sour Meatball Kabobs are the perfect little dinner to add into your grilling rotation!

Marinade
  1. 1/2 Cup Ketchup
  2. 1/4 Honey
  3. 1 Tbsp. Lime Juice
  4. 2 Tbsp. Soy Sauce
  5. 1 Tbsp. Sriracha
Meatballs
  1. 1/4 Cup Flour
  2. 1 Cup Small Yellow Squash, Grated
  3. 1/2 Tbsp. Garlic Powder
  4. 1 tsp. Ginger
  5. Salt
  6. 1 Egg
Kabobs
  1. 2 Bell Peppers
  2. 1 Red Onion
  3. 1 Tbsp. Olive Oil
  4. 1/2 Tbsp. Garlic Powder
  5. Salt
  6. Pepper
  7. 1 Tbsp. Lime Juice
Instructions
  1. In medium bowl, place ground beef, flour, garlic powder, ginger, salt and egg.
  2. Prep squash by grating. Place shredded squash in between two paper towels and press dry, then add into meat bowl.
  3. Mix ingredients until completely combined. Form into meatballs and place in a second bowl.
  4. Mix marinade by combining all ingredients, Pour 2/3 of marinade over meatballs and allow to sit for 15 minutes.
  5. While meatballs are marinating chunk your vegetables to the size you would like for your skewers.
  6. Once everything is prepped, alternate placing meatballs and vegetables on the skewers.
  7. Grill for 15 minutes rotating skewers every 5 minutes.
