Stuffed Pepper Soup

During the fall we make a soup pretty much every week in our house. We have a nice dinner with it one night and then my wife likes to save the rest so that way she has lunches for a few days during the week. Not wanting to just have the same soups over and over all the time we also like to experiment with different ones. That’s where my love of stuffed peppers came into play. They are a dish that I have always loved even as a kid, which yes is a little off it isn’t much of a kids dinner is it lol. Turning it into a soup though is perfect. The flavors lend themselves perfectly to this type of recipe and end up making an amazingly filling and great tasting soup. A little bit of warm bread with this one and you guys will be in heaven. You seriously need to try this Stuffed Pepper Soup!!

Ingredients
  1. 1 lb. Ground Beef
  2. Salt
  3. Pepper
  4. 1 Yellow Onion, Chopped
  5. 3/4 Cup Red Bell Pepper, Chopped
  6. 3/4 Cup Green Pepper, Chopped
  7. 2 Garlic Cloves, Minced
  8. 2x 14.5 oz. Cans Petite Diced Tomatoes
  9. 15 oz. Can Tomato Sauce
  10. 14.5 oz. Beef Broth
  11. 2-1/2 Tbsp. Parsley
  12. 1/2 tsp. Basil
  13. 1/4 tsp. Oregano
  14. 1 Cup Uncooked White Rice
