I don’t do as many breakfast recipes on here as I do other recipes so you wouldn’t know that I probably make more breakfast foods at home than anything else. My daughter loves sweet breakfasts like fruity pastries and things like that, or dessert like pancakes ( I have made a lot of those). My son on the other hand loves a more hearty Breakfast. He is into casseroles and skillets. So I decided to do one for him today. This Simple Hash Brown Skillet is probably the easiest skillet to make. I mean skillets are pretty darn simple to begin with and this one is even easier than most lol. It doesn’t hurt there is a LOT of bacon in here helping it taste freaking phenomenal. So you have easy, great tasting and on top of that you don’t have to nurse it the whole way through. This will quickly become a favorite in your household!

- 1 lb. Bacon, Chopped
- 1 Small Onion, Chopped
- 20 oz. Shredded Hash Browns, Thawed
- 4 Eggs
- 1 Cup Cheddar Cheese, Shredded
- Salt Pepper
- In large skillet cook chopped bacon over medium heat until it starts to releases it's fats, add in chopped onion.
- Season with Salt and Pepper to taste, cook until bacon is starting to get crispy and onions are soft.
- Drain excess fat, leaving 1/4 Cup in the pan.
- Add in Hash Browns
- Cook over medium heat uncovered for 8 to 10 minutes, then turn potatoes.
- Make holes in the hash browns with wooden spoon, break one egg into each whole and season with Salt and Pepper.
- Cover, turn heat down to low and cook until egg is set the way you like.
- Uncover, sprinkle with shredded cheese, allow to melt then serve.
