Mint Chocolate Chip Pancakes

It’s the weekend, well Saturday to be specific you know that that means! Well I mean other than not having to go into work today I mean lol. It means it’s time for another AWESOME Pancake recipe. Today I am making some Mint Chocolate Chip Pancakes. This one is one that gets made a lot in this house between my wife and my daughter. So I was told I have to drop it in to the rotation and make a post for it so they could have an excuse for me to make them lol. I mean really this is a classic flavor pairing that lends itself so well to the simplest of breakfasts, the pancake lol. I mean come on who doesn’t like mint chocolate chip ice cream right? Mint Chocolate Chip Pancakes Recipe

Ingredients
  1. 1-1/3 Flour
  2. 1 Tbsp. Sugar
  3. 1 tsp. Baking Powder
  4. 1/2 tsp. Baking Soda
  5. 1 Cup Buttermilk
  6. 2 Tbsp. Butter, Melted
  7. 1 Egg
  8. 1/2 tsp. Vanilla
  9. 1/2 tsp. Mint Extract
  10. 3/4 Cups Chocolate Chips
  11. 3-4 Drops Green Food Coloring
  12. Salt
Instructions
  1. Whisk together flour, sugar, baking powder, baking soda, and salt into a bowl.
  2. Whisk together buttermilk, egg, butter, extracts, and food coloring in a small bowl. Add to dry ingredients and stir until incorporated. Stir in chocolate chips.
  3. Heat a large nonstick skillet or griddle over medium heat.  Spread 1/2 tablespoon of butter on the hot skillet.   Pour 1/4 cup of pancake batter onto the skillet for each pancake.  Cook for 1 to 2 minutes, until bottom is golden brown and edges begin to bubble, then carefully flip and cook for 1 to 2 minutes more.  Transfer to plates.  Repeat with remaining batter.
  4. Serve warm with whipped cream, vanilla ice cream, hot fudge sauce, and more chocolate chips, if desired.  Makes about 12 pancakes.
