I know I am usually on here doing my burger recipes, and making tons of meats all the time. Sometimes though I like to eat a little healthier, a little lighter. Take these Loaded Guacamole Vegetarian Tacos, they are an amazing yet simple meal that taste so good you wont even be bothered by the fact they are Vegetarian. Let’s be honest on top of everything else these bad boys are healthy! So go ahead make up a batch and dig right into them!

  1. 2 Avocados
  2. 1 Lime
  3. Salt
  4. 1/3 Up Corn Kernels
  5. 1/4 Cup Red Bell Pepper, Diced
  6. 2 Tbsp. Poblano Pepper, Diced
  7. 1 Tbsp. Red Onion, Diced
  8. 1 Tbsp. Jalapeno, Diced
  9. 2 tsp. Cilantro, Diced
  10. 1 Garlic Clove, Minced
Black Beans
  1. 1 (15 oz.) Can Black Beans, Drained
  2. 1/3 Cup Corn Kernels
  3. 1/4 CupRed Bell Pepper, Diced
  4. 1/4 Cup Poblano Pepper, Diced
  5. 1/2 tsp. Cumin
For Tacos
  1. 6 - 8 Tortillas
  2. 2 Cups Lettuce, Chopped
  3. 1 Tbsp. Cilantro, Minced
