Lemon Ricotta Zucchini Pancakes

I notice I have put out a lot of recipes up on my channel here BUT I hadn’t done a lot of breakfast recipes. So I decided to break out and do some really cook pancakes. I mean you could just go basic or you can have a little fun with things right?! So I made some Lemon Ricotta Zucchini Pancakes. Out of all the different kinds of pancakes I make this is my wife’s favorite. She isn’t much of a breakfast food eater so when I do find one she likes I will work that one to perfection so this one is perfect for the pickiest of breakfast eaters =)

1. 1-1/2 Cups Flour
2. Salt
3. 1 Tbsp. Sugar
4. 1-1/4 Cup Milk
5. 1 Egg
6. 3 Tbsp. Butter
7. 1 Cup Zucchini, Shredded
8. 3/4 Cup Ricotta
9. 1 Tbsp. Baking Powder
10. 2 Tbsp. Butter, Melted
11. Zest from 1 Lemon
