What’s up everyone? Happy Monday! I decided today I am going to do a nice simple dinner recipe that will be loved in everyone’s homes. An awesome Jalapeno Popper Chicken Casserole! I know I am always looking for something a little different to serve to the family but keeping it simple and not too expensive. This version of a Chicken Casserole is all of those things. Heat wise too you don’t have to worry about it since we are removing the seeds from the Jalapeno.. well unless you want to add to the heat lol then you can leave those seeds in. Heat, no heat either way this is a simple and quick dinner that I know anyone and every one in your family will love and let’s be honest cooking a family style one dish dinner is always a winning route for the person cooking it lol. Jalapeno Popper Chicken Casserole Recipe

Total Time: 1 hour

Yield: 8 Servings

Jalapeno Popper Chicken Casserole Recipe

Ingredients

  • 1/2 lb. Bacon
  • 2-1/2 Cups Chicken, Cooked & Shredded
  • 1 Cup Chicken Broth
  • 1 Cup Milk
  • 1 Cup Monterey Jack Cheese, Shredded
  • 8 oz. Cream Cheese
  • 8 oz. Pasta, Cooked
  • 3 Jalapenos, Seeded &Diced
  • 1 Onion, Chopped
  • 1 Garlic Clove, Minced
  • 2 Tbsp. Flour
  • 1 Tbsp. Butter

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook bacon in a large nonstick pan. Crumble bacon and set aside.dd onion to bacon grease and cook until soft. Add garlic and cook 1 minute.
  3. Add butter to pan. When melted, sprinkle flour into pan. Stir and cook 1 minute.
  4. Gradually whisk in chicken broth and milk. Add cream cheese and stir until melted.
  5. Remove pan from heat and stir in half of Monterey Jack cheese and half of cheddar cheese until smooth.
  6. Stir in diced jalapeno, chicken, pasta, and half of bacon.
  7. Pour into a greased casserole dish. Cover with aluminum foil and bake for 20 minutes.
  8. Remove foil, sprinkle with remaining bacon, cheese and the sliced jalapeno.
  9. Return to oven and bake 10 more minutes.
