Funfetti Unicorn Bars

I had been looking for an excuse to make another one of my unicorn recipes. So when I got my new Wrestling with Unicorns t-shirt I said that’s it I need to make a Unicorn recipe lol. As usual when I make sweets I have one person I turn to in order to decide which one it should be. MADELYN!! Yup little Maddie is the go to when it comes to what desserts I am going to film. So she picked my awesome Funfetti Unicorn Bars. They are great little cake bars, when ever I make these I end up over eating them lol. I am usually wrestling Maddie for them, honestly she beats me most of the time =( but come on keeping cake from a 7 year old girl isn’t easy lol. So go ahead give these a try and let me know that you love them as much as I do lol.

Cake
  1. 1 Cup Butter, Melted
  2. 1-1/2 Cup Sugar
  3. 2 tsp. Vanilla
  4. 3 Eggs
  5. Salt
  6. 2 Cups flour
  7. 1/2 Cup Sprinkles
Frosting
  1. 1 Cup Butter
  2. 4 Cups Powdered Sugar
  3. 3 Tbsp. Milk
  4. Blue Food Coloring
Instructions
  1. Preheat the oven to 350°F. Line a 9x13 pan with foil and coat with nonstick spray. Set aside.
  2. In a large bowl whisk together the butter and sugar. Add in the vanilla, eggs and salt and whisk until smooth. Using a rubber spatula stir in the flour until just combined. Finally stir in the sprinkles.
  3. Spread the batter into the prepared pan.
  4. Bake for 25-30 minutes until the edges are set. The bars might seen underdone, but allow them to cool completely.
  5. In the bowl of the stand mixer beat the butter for 1-2 minutes until it's smooth. Turn the mixer to low and slowly add in the powdered sugar. Next add in 2 tablespoons of milk and mix on medium speed until it's creamy, scraping the sides as necessary. If the frosting is too stiff add in 1 more tablespoon of milk until the desired consistency is reached. Finally add in 1-2 drops of blue fool coloring and mix until a pale blue color is reached and evenly mixed.
  6. Pipe or spread the frosting on top of the bars.
  7. Garnish with more sprinkles if desired.
