Hey everyone! It’s Friday so I have the perfect recipe for a Friday night! An AWESOME Frito Pie Burrito. Yup a nice big burrito with tons of fresh ingredients. This is one of those when we made these I couldn’t stop chowing down. I literally over ate I stuffed my self lol. Guys this is the ultimate burrito and the perfect dinner for that relaxing Friday night. So go ahead and make this one I know you will totally love it!

Frito Pie Burrito Recipe

Ingredients
  

Filling:

  • 1 lb. Ground Beef
  • 8 oz. Tomato Sauce
  • 1 tsp. Flour
  • 1 tsp. Chili Powder
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Cocoa Powder
  • 1/8 tsp/ Cumin
  • 15 oz. Pinto Beans Rinsed and Drained
  • Salt
  • Pepper

Pico De Gallo:

  • 2 Tomatoes diced
  • 1/2 Red Onion Diced
  • 1 Jalapeno Seeded and Diced
  • 1/2 Cup Cilantro chopped
  • Juice of 1 Lime
  • Salt

Chili Queso:

  • 1-1/2 Cup Milk
  • 8 oz. Sharp Cheddar Shredded
  • 4 oz. Can Green Chiles
  • 4 oz. Cream Cheese
  • 2 Tbsp. Butter
  • 2 Garlic Cloves Minced
  • 1 Jalapeno Seeded and Diced
  • 1 Tbsp. Cornstarch
  • Salt
  • Pepper

Avocado Cream

  • 1 Avocado
  • 1/2 Cup Sour Cream
  • Juice of 1 Lime
  • 4 Large Tortillas
  • 1 Cup Pickled Jalapenos
  • 2 Cups Fritos Corn Chips

Instructions
 

  • In Pan/Skillet break up and brown the ground beef. Once completely cooked add tomato sauce, then fill the can with water and pour that in the pan also. Stir in flour, chili powder, salt, pepper, onion powder, garlic powder, cocoa and cumin. Bring to a boil, turn down heat and allow to simmer 35 minutes.
  • While the beef is cooking prep pico de gallo. Add all ingredients into a medium bowl, toss together and refrigerate until ready to use.
  • For queso, melt butter in a pan. Add garlic and jalapeno cooking for about 1-2 minutes. Whisk in cornstarch, slowly whisk milk in until it is smooth. Allow to cook for a couple of minutes until it thickens a bit. Add in cream cheese and whisk until it is smooth. Turn off heat and add in cheese stirring until it is completely melted. Stir in green chilis and keep warm.
  • To make the avocado cream mash all ingredients together in a bowl and set aside.
  • Once beef is done stir in pinto beans.
  • Lay your tortilla out. Lay pickled jalapenos in the middle of the tortilla, avocado cream, pico de gallo, ground beef, queso sauce and Fritos. Fold edges over, then wrap by rolling the burrito.
