I was thinking about what I should film this time around. Sometimes I really get stumped. I mean I have hundreds of different things I play with and have fun with. So with this mass of recipes I really get stumped sometimes. So occasionally I just film myself cooking a lunch or a dinner I am prepping for the family rather than a recipe just for the show. This is exactly one of those. These Chicken Enchilada Stuffed Poblanos are such a great little recipe I know you guys will totally love this one. It is a really cool twist on simple Chicken Enchiladas that really pop. It doesn’t take a long time to make and is a game changer when you bring it to the dinner table.

  1. 1 lbs. Boneless, Skinless Chicken Breast
  2. Salt
  3. Pepper
  4. 1 Cup Corn
  5. 1 Cup Cooked Rice
  6. 2 Cups Cheddar Cheese, Shredded
  7. 4-5 Large Poblanos
  8. 2 Tbsp. Butter
  9. 2 Tbsp. Flour
  10. 14 oz. Chicken Broth
  11. 11 oz. Ro-Tel
  12. 4 oz. Cream Cheese
  13. 1/2 Cup Sour Cream
