Ingredients
  1. 4 Large Russet Potatoes
  2. 6 Slices of Bacon
  3. 1/4 Cup of Milk
  4. 1 Cup Shredded Cheddar Cheese
  5. 2 Green Onions thinly chopped
  6. 4 Large Eggs
Instructions
  1. Preheat the oven to 375 degrees. You can either bowl your potatoes (this is what I did) or you can put poke holes with a fork then microwave them for about 16 minutes.
  2. Cook Bacon in a large skillet over medium heat, turning occasionally, until crispy. Reserve 2 tablespoons of the drippings. Finely Chop cooked bacon.
  3. Slice off the tops of the Potatoes, scoop out the potatoes into a bowl. You want to create as deep of a bowl as you can leaving about a 1/4 thick wall on the potato.
  4. Add the 2 Tablespoons of bacon drippings and warmed milk into the bowl of potatoes and mash. Mix in cheese, onions, and the chopped bacon.
  5. Fill the hollowed out potatoes with the mix, press it in tightly with a spoon creating a long a deep well for the eggs.
  6. Place potatoes onto a baking tray, crack eggs and carefully pour into the well in each potato.
  7. Place potatoes into oven for 20 - 25 minutes.
  8. Once potatoes are done cooking season to your taste place a half slice of bacon on top and sprinkle a little green onion over it for contrast.
Notes
  1. I LOVE a little hot sauce on this too, but that's just me and my love of hot sauce =)
