Black Bean Sweet Potato Tacos

Sometimes you just need something quick and simple for dinner (or lunch), trust me I know this feeling. Right now my son is in wrestling and my Daughter is in drama and dance. This means some nights I am bouncing between activities to make sure everyone is getting where they are going on time. So quick and simple are a commodity on those days. These Black Bean Sweet Potato Tacos are super quick, super simple and on top o that they are a pretty healthy dinner! I mean honestly you can’t go wrong with this one. So go ahead try this one out I know you are a the run constantly and need this one!

Ingredients
  1. 4 Sweet Potatoes, Cubed
  2. 1 Onion, Diced
  3. 2 Tbsp. Olive Oil
  4. 2 Garlic Cloves, Minced
  5. 1 Cup Refried Black Beans
  6. Salt
  7. Pepper
  8. 2 Tbsp. Coconut Oil
  9. 8 Corn Tortillas
Instructions
  1. In a large pan place olive oil and sweet potatoes.  Cover pan and cook over medium heat for 5-7 minutes, stirring occasionally.
  2. Add onions, garlic, salt and pepper.  Continue cooking over medium heat for 7-8 until sweet potatoes are cooked through.
  3. In a separate pan over medium heat, add one tablespoon coconut oil and 2-3 tortillas.  Heat up tortillas for 1-2 minutes on each side.  Remove tortillas and place on a paper towel to remove excess oil.  Repeat with remaining tortillas.
  4. For serving, fill each tortilla with 2 tablespoons black beans and equal amounts of the sweet potato/onion mixture.  Top with cheese and cilantro and enjoy!
