BBQ Brisket Potato Skins

After going to South Moon BBQ to get some brisket I had some left overs. I had made an really great BBQ Brisket Pizza (the last video I posted) and along with that I wanted to make another cool brisket recipe. So I took the rest of that brisket and went with BBQ Brisket Potato Skins. I love playing with Potato skins and trying different combinations with with. I mean come on who doesn’t love potato skins right? We go out to our favorite little restaurants and get them as appetizers all the time, so why not make your own and make a different variation on them! Ingredients
  1. 10 Russet Potatoes
  2. 2 Cups BBQ Brisket
  3. 1 Large Onion, Sliced
  4. 2 Tbsp. Butter
  5. Salt
  6. 1/2 Cup BBQ Sauce (I used South Moon BBQ's Sweet Heat)'
  7. 3/4 Cup Cheddar Cheese, Shredded
Instructions
  1. Preheat oven to 375 degrees. Wrap potatoes in tinfoil and bake for 45 minute to 1 hour so insides of Potatoes are nice and soft.
  2. In a skillet over medium high heat melt the butter, add in the onions and salt to taste stir. Let cook for a total of 20-25 min until the onions soften and turn translucent.
  3. Remove cooked potatoes from tinfoil, slice in half and scoop the flesh out of the halved potato.
  4. Fry scooped out potatoes with oil set to 350 degrees for a couple of minutes until they are nice and golden brown.
  5. start to layer the brisket, the onions, the cheese and BBQ sauce.
  6. place in oven for 10 min or until the cheese is all metly.
