Well here we are almost Christmas time. This year really has flown by so quickly, I have been running around like mad the last two days prepping and getting things together so Saturday’s Pancake of the Week is coming out on Sunday lol sorry about that. Today I am making some really fun and simple Almond Joy Pancakes. I go back and forth sometimes making pancakes completely from scratch, sometimes using a mix and adding to it. These are a mix based pancake, which makes them just that much easier. Let’s be honest too, dessert for breakfast is ALWAYS a win. So when you throw down and make these bad boys, because I know you will make sure to take a pic and post them to my Facebook page!

Almond Joy Pancake Recipe

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes
Course Breakfast
Servings 4 Servings

Ingredients
  

  • 1 Cup Pancake Mix
  • 1/4 Cup Chocolate Chips
  • 1/4 Cup Shredded Coconut
  • 1/4 Cup Almonds Chopped
  • 1 Tbsp. Maple Syrup
  • 1/2 tsp. Almond Extract
  • Chocolate Sauce (Optional)

Instructions
 

  • Mix together pancake batter as per boxed instructions. Add the maple syrup and almond extract and mix until completely combined.
  • Stir in the chocolate chips, coconut and chopped almonds.
  • Heat pan/skillet over medium heat, pour in batter about a 1/4 Cup at a time and cook until golden brown. About 2-3 minutes per side.
  • Sprinkle with more chocolate chips, almonds and shredded coconut. Drizzle with chocolate sauce and serve.
